The i7 won't run with multiple sockets, IIRC.  You want the
workstation equivalent, the Xeon 56xx series. Be prepared for sticker
shock.

Intel doesn't support 6Gb/s SATA or USB3 in it's chipsets yet (both
are too new), so you'll be looking at either a 3rd party card or
onboard 3rd party chipset for either.
