Debian.

Ubuntu makes it super simple to get Linux on a Mac, but the standard 
Debian installer works just fine too.  I dual boot my dual 533Mhz G4 
with Ubuntu & OS X.  Though I'm thinking of removing Ubuntu and going 
straight Debian (I like doing it myself).
