Jim,
    There are many good books on how to learn C. Your best bet is to get 
a self paced book, and use in on your own Linux box. If you need a 
structured environment then see if another instructor will do. Which 
course was it? I see the following available (and much more):
CSI 234 - Introduction to C for Non-Programmers /2 cr. hrs./3 periods (1 
lec., 2 lab)
CSI 235 - Introduction to C for Programmers /1 cr. hr./1.5 periods (.5 
lec., 1 lab)


In addition you can get assistance from many of us on the list.
