According to a very in-depth review of Redhat 8.0, it comes with a
modified version of Gnome 2 where RH 7.x uses Gnome 1. I believe Gnome 2
is so different from Gnome 1, that the configuration files are not
compatible and that's why all of your preferences seem gone. I bet your
configurations for Gnome 1 from RH 7.2 are still there in your home
directory in hidden directories such as .gnome*, etc. But Gnome 2 is
using config files which are in directories like .gnome2*. I don't think
you'll have much luck importing your Gnome 1 settings into Gnome 2. I
looked briefly at the Gnome 2 user's guide at gnome.org and didn't see
anything about an import tool.

The RH 8.0 menu was one of the biggest complaints of the new release.
