Dreamhost won't give you the full control it sounds like you're looking for
(unless they've changed their plans in the last few years). You get a lot
of storage, but if i recall correctly, their systems are generally
overloaded and you have very little control (a true shared host). My
favorite VPS providers, by far, have been Linode (http://www.linode.com/)
and Slicehost (http://www.slicehost.com). Linode has gotten a little bit
cheaper than Slicehost over the last year or so. I've used both extensively
and have been very, very happy with them.
