There are a lot of similar devices like this.
I think the problem with stroke victims (as well
as victims of Parkinsons, etc.) is that their
dexterity is significantly impacted.  E.g., I
was suggesting just a simple "click on/click off"
(voice) recording scheme with the resulting file dropped
into an outgoing email folder.  This cuts down the number
of "controls" (keys) that the user has to deal with
and makes the experience a lot less intimidating and
frustrating.
