No, that's not the case if you use the Touch 2nd generation or later. Use
the iPhone ear buds that have the in-line mic, and plug it into the regular
ear bud jack in the bottom. You *can* use a different type of mic and do the
whole adapter thing, but it is not necessary at all, and the recording
quality is actually quite good.

As for comfort with those ear buds, now, *that's* another story. It would be
nice if some 3rd parties would make nicer ear buds with a mic in line for
the iPhones/Touches...
