If you can enable serial port access
on the linux box you can buy a usb serial port for the laptop and get a null modem cable.

In order to do this without going through a network, you need to have a
video input port on the laptop. I've never seen this on a laptop before, and
some quick googling doesn't turn up anything. Maybe if there's a VGA-in to
USB adapter out there somewhere, you could do it, but in general, VNC or
some other network based remote desktop program is the way to go.
