[Tfug] Limited Installation

The system that host my website (a 12+ year-old Sun SparcClassic) is
showing signs of impending death and I'm looking at options for a
replacement.  Offsite hosting is right out.  The most obvious solution is
to take an old PC (I've got a mostly unused 700MHz Dell beast) and put
Linux on it.  However, I don't want to have anything on this system that
isn't required for running apache server, java, and on rare occasions sftp
and ssh.  Is there a good reference (on-line or off) on how to do such a
minimalist installation?
